What's the Difference?

There are many ways to preserve fruits, and here are several common terms and their definition:

Preserves are made either with the whole fruit, of large pieces of the cut fruit and the texture is definitely chunky!  Recipes will include sugar and often pectin.

Jam can be either be made with crushed or pureed fruit to make a thick spread. Jams are made with sugar and likely pectin.

Jelly is made from cooked fruit juice, which is strained through a 'jelly bag' after cooking the juice with sugar and pectin, to remove any solid pieces.  It is a clear gel.

Marmalade refers to  preserves made from citrus fruits only.

Fruit Butters are usually made from tree fruits, such as apples, pears or plums, which are cooked and then run through a ricer or food mill, to remove the skins and seeds. (Just like applesauce).  The fruit sauce is then cooked - usually with sugar and possibly spices -  to evaporate the water, until it is a thick sauce.  Applebutter is one of the most common fruit butters.

Fruit Spreads are similar to preserves or jams, except that no sugar is added.

  1. This is a good informative post that simply explains the differences. I had a general idea of some of these differences but not to such a specific and detailed level, so I definitely learned something.

    Also, your blog as a whole has some great pictures.
