Some Basics of Jam Making
So what does it take to make exceptional jam? First, and foremost, it takes the highest quality fruit.
The same rule that applies to wine making, also applies to jam making: You can make bad jam from good fruit, but you can never make good jam from bad fruit!
High quality fruit is the basis of all jams, jellies, preserves and spreads! Freshly picked, ripe fruit without blemishes, from your own garden, or from someone you trust to grow responsibly.
Responsible growing means using sustainable agricultural practises, that minimize or eliminate the need for insecticides and herbicides.
Second, and just as important, is cleanliness. Cleaned fruit, a clean environment, sanitized jars, utensils and lids are essential.
